Satay chicken kebabs

Marinated Chicken Kebabs With a Peanut Satay Sauce

Ingredients:

5 chicken breasts (about 800g in weight.)
8 long skewers

Marinade

5 tablespoons soy sauce
3 tablespoons lemon juice
1 1/2 tablespoons brown sugar
4 garlic cloves, crushed
1 teaspoon ground coriander
1 teaspoon ground cumin
2 teaspoons fresh ginger, grated
pepper

Peanut Sauce

1 tablespoon olive oil
1 onion, finely chopped
2 garlic cloves, crushed
2 tablespoons soy sauce
3 tablespoons peanut butter
1 cup water
1 tablespoon lemon juice
2 teaspoons curry powder (I use hot curry powder)
3 teaspoons sweet chili sauce

Vegetables for Skewers

1 large onion, chopped into wedges
8 -16 mushrooms (depends on size if they are large chop in half and you will only need 8 if small and using whole mus)

Directions:

Combine all the marinade ingredients together in a large bowl or storage container. Chop chicken into about 2cm cubed pieces, add to marinade and marinate for several hours or overnight.

Soak skewers in water for about 30 minutes prior to using to prevent them from burning while cooking.

Reserve marinade. Thread a piece of chicken followed by a mushroom, chicken, onion, chicken, mushroom, chicken, onion, chicken. Repeat with remaining chicken and vegetables.

Grill or BBQ skewers turning a couple of times and basting with the reserved marinade. Until cooked about 15-20 minutes.

I usually use red and yellow peppers as well but as I was serving these over a Thai-style salad that already had peppers in it, I chose to omit them.

Sauce.

I prefer to make this ahead of time and just re-heat as this allows for the flavors to really come out.

Heat oil in a pan, add onions and garlic and cook to soften onion.

Add remaining ingredients and stir to combine, leave on a low heat, stirring occasionally until sauce thickens. Sauce can be made a day ahead and just re-heated.

Ingredients

Original recipe makes 1 – 9 inch 3 layer cake聽
  • 2 1/8 cups all-purpose flour

  • 2 cups white sugar

  • 3/4 cup unsweetened cocoa powder

  • 1 1/2 teaspoons baking powder

  • 3/4 teaspoon baking soda

  • 3/4 teaspoon salt

  • 3 eggs

  • 1 cup milk

  • 1/2 cup vegetable oil

  • 1 tablespoon vanilla extract

  • 2 (20 ounce) cans pitted sour cherries

  • 1 cup white sugar

  • 1/4 cup cornstarch

  • 1 teaspoon vanilla extract

  • 3 cups heavy whipping cream

  • 1/3 cup confectioners’ sugar

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch, round, cake pans; cover bottoms with waxed paper.
  2. In a large bowl, combine flour, 2 cups sugar, cocoa, baking powder, baking soda, and salt. Add eggs, milk, oil, and 1 tablespoon vanilla; beat until well blended. Pour batter into prepared pans.
  3. Bake for 35 minutes, or until wooden toothpick inserted in centers comes out clean. Cool layers in pans on wire racks 10 minutes. Loosen edges, and remove to racks to cool completely.
  4. Drain cherries, reserving 1/2 cup juice. Combine reserved juice, cherries, 1 cup sugar and cornstarch in a 2 quart saucepan. Cook over low heat until thickened, stirring constantly. Stir in 1 teaspoon vanilla. Cool before using.
  5. Combine whipping cream and confectioner’s sugar in a chilled medium bowl. Beat with an electric mixer at high speed until stiff peaks form.
  6. With long serrated knife, split each cake layer horizontally in half. Tear one split layer into crumbs; set aside. Reserve 1 1/2 cups Frosting for decorating cake; set aside. Gently brush loose crumbs off top and side of each cake layer with pasty brush or hands. To assemble, place one cake layer on cake plate. Spread with 1 cup frosting; top with 3/4 cup cherry topping. Top with second cake layer; repeat layers of frosting and cherry topping. Top with third cake layer. Frost side of cake. Pat reserved crumbs onto frosting on side of cake. Spoon reserved frosting into pastry bag fitted with star decorator tip. Pipe around top and bottom edges of cake. Spoon remaining cherry topping onto top of cake.

 

My tip is that you use chocolate ganache instead of whipping cream as frosting for a total chocolate bomb:

Ingredients
  • 12 ounces chocolate, chopped into small pieces
  • 1 cup heavy cream
  • optional 3 tablespoons flavored liqueor
Instructions
  1. Place chocolate pieces in a large bowl. Heat heavy cream on medium high until it comes to a boil. Remove from heat and immediately pour cream over chocolate and stir until completely mixed and glossy. Allow ganache to cool before pouring over cakes as a glaze. The longer you allow the ganache to cool, the thicker it will set. Place in the refrigerator so it is slightly cold before whipping. For piping or frosting, allow the ganache to completely cool and set up. When you are able to spoon the ganache and it can hold its texture, it is ready for piping.

Bring back taco night! Inspired by Old El Paso’s Taco Dinner Kit and Nickelodeon’s iCarly, these tacos are both delicious and fun to serve. Learn how to make them below.
ingredients: Add all to shopping list

1 lb turkey meat
1 packet taco seasoning
3 cups marinara sauce
1/2 lb spaghetti (1/2 box, broken in half)
6 Tbsp salsa
10 Taco shells
Cilantro for garnish

directions:

1. Cook Pasta & Sauce:
In a skillet over medium-high, brown 1 lb ground turkey until done. Add taco seasoning; cook according to package instructions. Add 3 cups marinara sauce. Simmer until very hot. Cook 陆 lb spaghetti. 3 minutes before spaghetti is done, add taco shells to oven.

Assemble Tacos:
When spaghetti is done, drain and return to pot. Stir in meat sauce and 6 Tbsp salsa. Remove taco shells from oven and fill with spaghetti mixture. Garnish with some fresh chopped cilantro.
